The story of us...
How we started
Our story begins when Brian, one of El Gringo Burrito's two co-owners, left Ireland for California after college. He ended up getting a job in a Mexican restaurant where he was aptly nicknamed 'El Gringo'. Many, many years later (sorry Brian!) after he met Felim and they realised their shared love of great Mexican flavours and quality Irish food, they decided to open their very own Burrito bar. And, well, our name was always going to be El Gringo Burrito wasn't it? And while we may not be the first burrito joint in Ireland, we definitely wanted to be the best.
So we began to search for a great chef who could work with us to design a menu that would be authentic Mexican. And we found one in Dave Rice! We did good huh? And then together we developed unbelievable flavours and great recipes that we know you're gonna love. Our aim is to get you the freshest, healthiest and tastiest burrito, exactly as you like it.
All our meat is locally sourced of course. We measure our food in kilometres not air miles! And our food standards are so high they're friends with the lads who live in very high apartment blocks...!!
Before joining the team at El Gringo as a consultant chef, Dave spent 2 years working as head tutor at Dublin’s premier cookery school, Cooks Academy. Prior to that, Dave worked as a senior chef at Dublin’s Michelin star restaurant Chapter One and was head chef at the Mustard Seed restaurant in Adare.
David was also fortunate to spend a year in the famous kitchens of Roly’s Bistro in Ballsbridge and to have completed work experience at Gordon Ramsay’s Claridges, River Café and Jamie Oliver’s Fifteen in Cornwall.
